Directions

  1. Dice the berries. Rinse and hull the strawberries, then dice them into small, even pieces so they cook down at the same rate.

  2. Fill the pan. Add the strawberries, orange juice, lemon juice, raw honey and brown sugar to a wide pan and stir to combine.

  3. Simmer with no lid. Bring it to a gentle simmer over low-medium heat and cook uncovered, stirring frequently so nothing sticks. Leave the lid off the whole time so the liquid can reduce.

  4. Smash and stir. Once the berries soften, after about 5 minutes, smash them right in the pan with a potato masher or the back of a wooden spoon. Keep simmering and stirring frequently until the sauce is thick and glossy, 15 to 20 minutes in all.

  5. Let it sit. Take the pan off the heat and let it sit, still uncovered, until it cools. It keeps thickening as it rests.

  6. Serve or store. Spoon it warm or cool over Cheesecake, biscuits, pancakes, waffles, yogurt or ice cream. Store it in a clean jar in the fridge for up to a week.

What It Adds to Your Diet

  • Strawberries: packed with vitamin C, manganese, folate and fiber, plus the deep red plant compounds that give them their color. A spring tonic in farm kitchens for generations.
  • Raw honey: a natural sweetener valued for centuries in home remedies, used here in place of most of the sugar.
  • Orange and lemon juice: more vitamin C and citrus flavonoids, and the brightness that lets this recipe get by with very little sugar.
  • Lighter than store-bought jam: only 1 tablespoon of brown sugar in the whole batch.

From Our Kitchen

Go easy on the sugar: the honey brings plenty of natural sweetness, so don't add more sugar than the recipe calls for.

Saucy or jammy: adjust the orange and lemon juice to get the texture you like. Use more juice for a looser, pourable sauce, or less for a thicker jam or jelly style.

Keep the heat low-medium: a gentle simmer keeps the berries bright and keeps the sauce from scorching.

Chunky or smooth: smash lightly for a chunky sauce, or keep smashing for a smoother one.

Raw honey: to keep more of its natural goodness, you can stir the honey in after the pan comes off the heat instead of at the start.
